I have been on a long blogging hiatus as we made our move back to the US, found a home, settled in, worked out our new normal. It’s been a weird, wonderful, confusing and illuminating move for our family.

Pad Thai
It’s been a long time since many of us have eaten noodles. But since we started Keto, I learned about konjac noodles, also known as Shirataki or miracle noodles.
Pizza
With Max and Daniel both graduated already, we decided to have a celebratory pizza lunch. Pizza is tricky in our family since so many of us don’t eat wheat flour, and many don’t eat any grains at all. Luckily, Maya had a great keto pizza recipe up her sleeve.
Getting it all done
Before the ‘rona struck, I was feeling overwhelmed. It was almost March, we were planning to move back to the US at the end of April and the kids were in a full-on second semester panic as it began to dawn on them how much they had to get done.
Easter
As a family, we love celebrations and holidays. They give us something to plan for, projects to work towards, and exciting family time. Easter is a holiday that we could skip, though.
Cheese!
I have discovered a cheese I can eat! I am lactose intolerant and while I don’t mind missing out on milk, having to avoid cheese is killing me.
CV-19 food
So, now that CV-19 is threatening, we’ve made a conscious effort not to hoard. But also, we feel like we should really limit our visits to the grocery store.
